The August Coffee Selection

A favorite among our roasters, baristas and customers:

César Fernandez, Producer
Pacas and Catuaí. Grown at 1400-1700 masl.

César's four hectare farm was given to him by his father, and makes its way (rather steeply) from 1400 to 1700 meters above sea level.  What does that mean? MASL (meters above sea level), like many other variables, effects the flavor of your coffee. For example, coffee grown at high altitudes (greater than 2000 MASL) tend to have high acidity and more flavor and coffee at low altitudes (below 1000 MASL) tend to be bland and earthy. So you can gather from this that the coffee you are about to try was grown at an altitude that is optimal for coffee growing.
After picking ripe cherries, this blend of Pacas and Catuai (arabica coffee beans) a de-pulped at the Fernandez brothers' wet mill and immediately prepped for fermentation. Time in the tanks varies from 16-36 hours based on weather conditions. Friendly sibling rivalry has driven the Fernandez brothers to great success, selling their coffees to the finest roasters in the world. We can't wait for you to try it!

Roast:  Medium roast. Beans are grown at 1400-1700 MASL and are fermented between 16-36 hours depending on the weather.
